Fresh Bakes and Big Goals: Banjo’s Bakery Eyes National Presence by 2028

The last remaining bakery franchise in Tasmania, is gearing up to double its national footprint to 100 stores by 2028. Established in 1984, this family-run business currently operates 51 outlets across Australia and aims to open six more by year’s end, with nine additional leases already confirmed for 2026.

The expansion plan includes new locations in Perth and Darwin, as well as stores in North Queensland, specifically in Mackay, Townsville, and potentially Airlie Beach. Additionally, Banjo’s is considering a new drive-through outlet in Bundaberg, which would operate daily from 5 a.m. to 10 p.m.

Beyond just physical growth, the company is set to roll out its most significant menu expansion to date, introducing gourmet doughnuts in tempting flavours like OG Glazed, Biscoff, and Jam & Cream.

Acting CEO Bradley Saxby emphasised their dedication to quality and innovation, noting that each new store brings service to a fresh community. With a focus on regional areas and the success of their drive-through model launched in 2020, Banjo’s is well-positioned for significant growth.

It currently serves over 9 million customers each year, joining the ranks of popular cake and bakery franchises in Australia.
