Geláre was founded in 1986/1987 in Fremantle, Western Australia by entrepreneur Farid Torabi, starting as a gourmet ice cream parlor specializing in ultra-premium, creamier, thicker ice cream made with fresh milk, cream, and top-quality ingredients.

The brand quickly gained fame for its unique texture (more intense flavor than Italian gelato or American ice cream) and expanded to include freshly baked waffles, pancakes, and dessert cafe offerings.
